The Recipe 

White Chocolate Peppermint Fudge

Ingredients:

2 cups white chocolate chips

1 cup peppermint baking chips

½ cup crushed peppermint candy canes

1 tsp peppermint extract

14 oz can sweetened condensed milk

Cooking spray

Directions:

1. Spray a baking dish with non-stick spray

2. Place white chocolate chips and sweetened condensed milk in double boiler.

3. Stir often.

4. When all the chocolate is melted and there is a smooth consistency remove from the heat.

5. Add peppermint baking chips and peppermint extract.

6. Stir together until smooth.

7. Pour into baking dish.

8. Sprinkle crushed peppermint candy canes on top evenly.

9. Refrigerate for at least an hour.

10. Cut into squares and enjoy.

She was born blind due to cataracts. Thankfully at the young age of three months old, she had her first of four eye surgeries to restore her sight.  She has had four spine surgeries due to misshapen vertebrae and kyphoscoliosis.  She has had four surgeries on her hips, legs, and knees due to her bones.  She has endured many tests, procedures, castings, therapies, and appointments as she journeyed through life.  Through it all, she has remained joyful.  She is on a journey now to walk, defying the odds once again.

Even though Grace Anna faces all these tough things, she never allows them to define who she is.  She loves the Lord and lives everyday to the fullest.  She never allows her disability to keep her from experiencing life from playing softball to cooking a new recipe.”

The Recipe

Ingredients

1 box of your favorite chocolate cake mix

1 3.3 oz box of your favorite instant chocolate pudding mix

1 ¼ cup of cocoa

2 cups of sugar

3 eggs

¾ cup of butter

Cooking spray

½ cup of vegetable oil

1 ¼ cup of water

1 ¼ cup of whole milk

1 teaspoon of vanilla extract

Tub of vanilla ice cream

Directions 

1. Preheat oven to 350 degrees.

1. Coat a baking pan with cooking spray.

1. Combine the cake and pudding mixes in a large mixing bowl.

1. Add eggs, water, and vegetable oil. 

1. Beat ingredients electric mixer on medium speed for two minutes. 

1. Pour the batter into the greased cake pan.

1. Bake it for approximately 35 minutes.  

1. Set cake aside when finished baking and begin making the hot fudge topping.

1. In a 2-quart saucepan, combine sugar, cocoa, and milk. Whisk until there are no clumps.

1.  Set pan on medium heat burner.  

1. Bring to a boil, stirring as needed to keep from sticking.

1.  Add butter and continue to stir until the sauce thickens (usually around 4-5 minutes depending on your stove).

1. Remove from heat.

1. Stir in vanilla. 

1. Scoop a piece of cake into bowl.

1. Add a scoop of ice cream.

1. Pour desired amount of hot fudge topping over cake and ice cream.

1. Enjoy!

The Recipe

Caramel Pumpkin Crunch Cake

The Cake Layer Ingredients (Bottom Layer)

1 box yellow cake mix

1 cup whole milk

½ cup butter melted

1 teaspoon cinnamon

½ teaspoon ginger

¼ teaspoon nutmeg

1/3 cup of Caramel bits

The Soft Layer Ingredients (Second Layer)

1 cup pumpkin

1 cup sour cream

½ cup brown sugar

 ¾ teaspoon cinnamon

1 teaspoon vanilla

The Crunchy Layer Ingredients (Top Layer)

¾ cup of old-fashioned oats

¾ cup brown sugar

1 cup of all-purpose flour

½ cup of pumpkin seeds (you can also use walnuts, pecans, or sunflower seeds)

1 teaspoon of cinnamon \n \n½ cup of butter

1 teaspoon of vanilla

Add on Ingredient

1 container of caramel syrup

Directions: 

1. Preheat oven to 375 degrees. 

1. Coat a 9 X 13 baking dish with butter.

1. In a bowl combine all of Cake Layer ingredients.  

1. Mix with blender on low for one minute.

1. Pour into a butter coated baking dish.

1. In a bowl combine Soft Layer ingredients. 

1. Mix ingredients thoroughly by hand. 

1. Pour mixture over cake batter.

1. Spread gently with spoon until evenly distributed over the cake batter.

1. In a bowl combine the Crunchy Layer ingredients.

1. Sprinkle the crunchy mixture on top of the Soft Layer evenly.

1. Place in over for 30 minutes.

1. Remove and allow to cool.

1. Drizzle your favorite caramel syrup on top.

1. Enjoy!

The Recipe 

Blueberry Lemon Sugar Cookies

1 teaspoon of baking soda

½ teaspoon of baking powder

1 ¼ cup of butter softened

1 ½ cup of sugar

1 zest of lemon

1 large egg

1 teaspoon of vanilla extract

¾ cup of freeze-dried blueberries

Directions:

1. Preheat oven to 375 degrees.

1. In a small bowl, stir together flour, baking soda, and baking powder. Set aside

1. Cream together butter, sugar, and lemon zest by hand until fluffy

1. Add one large egg

1. Add vanilla extract.

1. Mix in the dry ingredients into the wet ingredients gently until just combined

1. Gently fold in blueberries

1. Roll rounded teaspoonfuls of dough into balls

1. Place onto ungreased cookie sheets

1. Bake for 9-11 minutes or until cookies are golden brown on the bottom

1. Remove from oven and cool on pan for 5 minutes

1. Transfer to cooling rack

1. Enjoy

Cinnamon Apple Cider

1 gallon apple juice

1 cup brown sugar

4 teaspoons of cinnamon

2 teaspoons of nutmeg

1 orange sliced

1 lemon sliced

Directions:

1. Heat the apple juice, brown sugar, cinnamon, nutmeg, orange slices, and lemon slices in a large saucepan.

2. Cook over medium heat for approximately 7 minutes or until the mixture is hot, stirring occasionally.

3. Carefully pour into mugs.

4. Top with whipped cream and add a cinnamon stick.

The Recipe

Ingredients

2 cups of all-purpose flour

1 teaspoon of baking powder

2 ¼ teaspoons of cornstarch

½ teaspoon of salt

1 cup of white sugar

½ cup of brown sugar

2 egg yolks

1 cup of unsalted cold butter

1 cup of strawberries

1 cup of blueberries

1 cup of raspberries

2 teaspoons of vanilla extract

2 teaspoons of lime juice

Directions: 

1. Preheat the oven to 375 degrees.

1. Combine flour, baking powder, salt, and white sugar.

1. Slowly cut in butter in tiny pieces until completely coated with the flour mixture.

1. Add egg yolks and vanilla extract.

1. Stir all together with a fork until it is all mixed well.  You may need to use your hands to mash out all of the lumps but it should still be dry, not wet.

1. Set aside the crumble mixture.

1. Combine all berries in a bowl.

1. Add lime juice, cornstarch, and brown sugar.

1. Mix well until all the cornstarch and sugar are absorbed.

1. Place half of the crumble mixture on the bottom of the baking dish.  Spread it out with your hands.

1. Spread the berry mixture over the crumble mixture.

1. Sprinkle the remaining crumble mixture on top.

1. Bake for 45 minutes or until it’s a golden brown with bubbly berries.

1. Let cool for 30 minutes.

1. Enjoy with a big scoop of vanilla ice cream.

The Recipe

Ingredients

8 cups of seedless watermelon

1/3 cup of chopped fresh mint leaves

Zest of 1 lemon

4 tablespoons of honey

2 tablespoons of lemon juice

Directions 

1. Cube watermelon and set aside.

1. Place chopped fresh mint into a large bowl. Make sure the mint is in tiny pieces.

1. Add honey, lemon zest, and lemon juice.

1. Mix thoroughly.

1. Place watermelon in honey mixture and gently toss.

1. Chill for two hours.

1. Enjoy!

Cranberry Splash Salad

Ingredients

1 ½ cup boiling water

1 box (6 ounce) strawberry gelatin

1 can (14 ounce) whole berry cranberry sauce

1 can (14 ounce) crushed pineapple

1 cup of sweet cherries halved

½ cup of canned mandarin oranges \n½ cup of chopped pecans

Directions

1. In a large bowl dissolve gelatin in boiling water.

2. Stir in cranberry sauce and crushed pineapple.

3. Refrigerate for 45 minutes.

4. Stir in cherries, mandarin oranges, and chopped pecans.

5. Pour into serving bowl.

6. Chill until firm.

Cinnamon Apple Cider

1 gallon apple juice

1 cup brown sugar

4 teaspoons of cinnamon

2 teaspoons of nutmeg

1 orange sliced

1 lemon sliced

Directions

1. Heat the apple juice, brown sugar, cinnamon, nutmeg, orange slices, and lemon slices in a large saucepan.

2. Cook over medium heat for approximately 7 minutes or until the mixture is hot, stirring occasionally.

3. Carefully pour into mugs.

4. Top with whipped cream and add a cinnamon stick.

Zest of 1 lemon

4 tablespoons of honey

The Recipe

4 tablespoons all-purpose flour

1 ¾ cups sugar

¼ teaspoon of salt

3 large egg yolks

3 cups milk

1 teaspoon vanilla extract

1 box vanilla wafers

7 bananas

Whipped cream 

Directions

1. Place a layer of vanilla wafers on the bottom of a cake pan or baking dish. 

1. Place a layer of sliced bananas on top of the vanilla wafers.

1. Set aside.

1. Mix together flour, sugar, and salt in a saucepan.

1. In a large bowl, beat lightly egg yolks with milk.

1. Pour the egg mixture into the saucepan mixing with dry ingredients.

1. Cook over a medium low heart constantly stirring.

1. Stir until pudding mixture is thickened with no lumps.

1. Stir in vanilla.

1. Pour pudding mixture over bananas and vanilla wafers.

1. Place another layer of vanilla wafers and bananas.

1. Pour pudding mixture over the second layer.

1. Depending on how many layers you want and size of pan/dish, continue the process of layering of vanilla wafers, bananas, and pudding mixture. 

1. Allow to cool then top with your favorite whipped cream topping.

The Recipe

Caramel Pumpkin Crunch Cake

The Cake Layer Ingredients (Bottom Layer)

1 box yellow cake mix

1 cup whole milk

½ cup butter melted

1 teaspoon cinnamon

½ teaspoon ginger

¼ teaspoon nutmeg

1/3 cup of Caramel bits 

The Soft Layer Ingredients (Second Layer)

1 cup pumpkin \n \n1 cup sour cream

½ cup brown sugar

¾ teaspoon cinnamon

1 teaspoon vanilla

The Crunchy Layer Ingredients (Top Layer)

¾ cup of old-fashioned oats

¾ cup brown sugar

1 cup of all-purpose flour

½ cup of pumpkin seeds (you can also use walnuts, pecans, or sunflower seeds)

1 teaspoon of cinnamon

½ cup of butter

1 teaspoon of vanilla

Add on Ingredient

1 container of caramel syrup

Directions: 

1. Preheat oven to 375 degrees. 

1. Coat a 9 X 13 baking dish with butter.

1. In a bowl combine all of Cake Layer ingredients.  

1. Mix with blender on low for one minute.

1. Pour into a butter coated baking dish.

1. In a bowl combine Soft Layer ingredients. 

1. Mix ingredients thoroughly by hand. 

1. Pour mixture over cake batter.

1. Spread gently with spoon until evenly distributed over the cake batter.

1. In a bowl combine the Crunchy Layer ingredients.

1. Sprinkle the crunchy mixture on top of the Soft Layer evenly.

1. Place in over for 30 minutes.

1. Remove and allow to cool.

1. Drizzle your favorite caramel syrup on top.

The Recipe

Ingredients

1 box of your favorite chocolate cake mix

1 3.3 oz. box of your favorite instant chocolate pudding mix

1 ¼ cup of cocoa

2 cups of sugar

3 eggs

¾ cup of butter

Cooking spray

½ cup of vegetable oil

1 ¼ cup of water

1 ¼ cup of whole milk

1 teaspoon of vanilla extract

Tub of vanilla ice cream

Directions 

1. Preheat oven to 350 degrees.

1. Coat a baking pan with cooking spray.

1. Combine the cake and pudding mixes in a large mixing bowl.

1. Add eggs, water, and vegetable oil. 

1. Beat ingredients electric mixer on medium speed for two minutes. 

1. Pour the batter into the greased cake pan.

1. Bake it for approximately 35 minutes.  

1. Set cake aside when finished baking and begin making the hot fudge topping.

1. In a 2-quart saucepan, combine sugar, cocoa, and milk. Whisk until there are no clumps.

1.  Set pan on medium heat burner.  

1. Bring to a boil, stirring as needed to keep from sticking.

1.  Add butter and continue to stir until the sauce thickens (usually around 4-5 minutes depending on your stove).

1. Remove from heat.

1. Stir in vanilla. 

1. Scoop a piece of cake into bowl.

1. Add a scoop of ice cream.

1. Pour desired amount of hot fudge topping over cake and ice cream.

1. Enjoy!

The Recipe

2 cups of all-purpose flour

1 teaspoon of baking powder

2 ¼ teaspoons of cornstarch

½ teaspoon of salt

1 cup of white sugar

½ cup of brown sugar

2 egg yolks

1 cup of unsalted cold butter

1 cup of strawberries

1 cup of blueberries

1 cup of raspberries

2 teaspoons of vanilla extract

2 teaspoons of lime juice

Directions 

1. Preheat the oven to 375 degrees.

1. Combine flour, baking powder, salt, and white sugar.

1. Slowly cut in butter in tiny pieces until completely coated with the flour mixture.

1. Add egg yolks and vanilla extract.

1. Stir all together with a fork until it is all mixed well.  You may need to use your hands to mash out all of the lumps but it should still be dry, not wet.

1. Set aside the crumble mixture.

1. Combine all berries in a bowl.

1. Add lime juice, cornstarch, and brown sugar.

1. Mix well until all the cornstarch and sugar are absorbed.

1. Place half of the crumble mixture on the bottom of the baking dish.  Spread it out with your hands.

1. Spread the berry mixture over the crumble mixture.

1. Sprinkle the remaining crumble mixture on top.

1. Bake for 45 minutes or until it’s a golden brown with bubbly berries.

1. Let cool for 30 minutes.

1. Enjoy with a big scoop of vanilla ice cream.

The Recipe 

Blueberry Lemon Sugar Cookies

1 teaspoon of baking soda

½ teaspoon of baking powder

1 ¼ cup of butter softened

1 ½ cup of sugar

1 zest of lemon

1 large egg

1 teaspoon of vanilla extract

¾ cup of freeze-dried blueberries

1. Preheat oven to 375 degrees.

1. In a small bowl, stir together flour, baking soda, and baking powder. Set aside

1. Cream together butter, sugar, and lemon zest by hand until fluffy

1. Add one large egg

1. Add vanilla extract.

1. Mix in the dry ingredients into the wet ingredients gently until just combined

1. Gently fold in blueberries

1. Roll rounded teaspoonfuls of dough into balls

1. Place onto ungreased cookie sheets

1. Bake for 9-11 minutes or until cookies are golden brown on the bottom

1. Remove from oven and cool on pan for 5 minutes

1. Transfer to cooling rack

1. Enjoy

The Recipe 

Cranberry Splash Salad

Ingredients

1 ½ cup boiling water

1 box (6 ounce) strawberry gelatin

1 can (14 ounce) whole berry cranberry sauce

1 can (14 ounce) crushed pineapple

1 cup of sweet cherries halved

½ cup of canned mandarin oranges

½ cup of chopped pecans

Directions

1. In a large bowl dissolve gelatin in boiling water.

2. Stir in cranberry sauce and crushed pineapple.

3. Refrigerate for 45 minutes.

4. Stir in cherries, mandarin oranges, and chopped pecans.

5. Pour into serving bowl.

6. Chill until firm.
